Catch 22’s Chocolate Orange Mousse

Ingredients
- 150g whipping cream
- 1 orange, zest and 40g juice
- 35g caster sugar
- 125g dark chocolate (65-70% cocoa)
- 2 medium free-range eggs, separated into white and yolks
- Extra whipping cream and Crunchie chocolate bars (to serve)
Method
- Put the cream, orange zest, orange juice, and caster sugar into a pan on a medium heat
- Once simmering, remove the pan from heat, add the chocolate and egg yolks, and whisk until smooth
- Use a mixer to whisk the egg until stiff peaks form
- Allow the choc mix to cool slightly and then fold in the whipped egg whites in three stages, mix until combined
- Divide the mixture into 4 glasses, put into the fridge for a minimum of 6 hours to set (the mixture will look a bit wet at this stage, like a thick batter, but don’t worry, it will set)
- When you are ready to serve, top the mousse with a little whipped cream, then smash up a Crunchie bar and add as much as you like.
