Foraged flavours and foodie deliveries to your holiday hideaway: a conversation with Earthly Feasts
As the autumn air turns crisp, Aimee Walker of Earthly Feasts (insert Earthly Feasts business descriptor here) continues to weave her signature blend of wild ingredients, soulful storytelling, and seasonal magic into every dish she creates.
From picnic hampers filled with foraged delights to nourishing dinners delivered to your bolthole, Aimee’s offerings are rooted in a deep connection to the land and a passion for creating unforgettable moments. We caught up with her to hear what’s on the horizon, why private dining in your holiday hideaway can be so special, and why foraging is the perfect way to make your memories of North Wales even more meaningful.
Aimee, when we last spoke you told us the inspiring story of how Earthy Feasts began and where your passion for food and foraging came from. Do you have any exciting things coming up?
I’m currently planning some pop-ups and supper clubs, which is really exciting. That’s where I get to take the practice of entwining seasonality, folklore and foraging.
The next pop up is over in Henbant Permaculture, Caernarfon, for Samhain (November 1st) It’s a 2 hour workshop and 3 course dinner called The Ancestral Table. Also, look out for upcoming Cookalong events: a hands-on night of cooking with live camera close ups, five delicious dishes to eat on the night and chef tips along the way. It’s not a class – it’s an event for friends/family/coworkers to relax, have fun and eat!
I would absolutely love to do woodland dining! I ran a feast in a Flower Farm on Anglesey at the end of the summer, and it was like a Pinterest board vision. It was magical and atmospheric. It had two parts, a pick your own bouquet experience where people picked, cut and gained tips about flowers. And then I delivered a three-course meal in the middle of the working flower farm. Dusk set, and the candles were lit and it was kinda cinematic and totally temporary. I love that about pop ups, it happens, and you leave as if you were never there, only the memories are left.

That sounds dreamy! What about if people want to hunker down in their hideaway – and indulge in great food?
There are lots of different options I can offer. I can deliver food to arrive before you do, anything from sweet treats to cottage hampers, big hearty meals or grazing platters. I can have everything ready, so you don’t have to think about going to the supermarket whilst on your holiday.
I offer private dining packages which can be a three to five course dining experience: I come in, and I cook for you and your family – I do all the washing up too so there’s nothing for you to do but to be present with your loved ones.
I also do picnic hampers. There’s an autumn menu now and a winter menu will follow – they will include hot soups, breads and pickles, ploughman style with some sweet treats, a picnic blanket and some enamel dishes. Everything ready for a picnic at the beach, on a walk or at your hideaway.
Why is foraging such a special thing to do?
I think it’s special because it brings an air of curiosity and creates a deep connection to nature. Being able to forage something near your bolthole and then cook with it makes that moment special and something that you’ll remember for a long time. You are really rooted in that moment, in that landscape, making memories with your family.
We know you did a big cook up for the Boltholes team last Christmas…why do you think you and Boltholes are such a good fit?
There’s a line on the Bolthole’s website about stepping out of reality into something magical. This is so much like the essence of what I wish the world would be like, reminding yourself that you are alive,which is totally magical and it’s a miracle that we’re here.
When I reflected on the Christmas experience, it was that everybody was personable and creative. I think we share similar values of being warm and giving so much attention to detail. You walk around a Boltholes house and there are details and design choices that you’ve never seen before. You can tell that the team really cares about the local houses and what they’re offering. It’s really special.

Do you have a special occasion that you have catered for that has stuck in your memory?
One of the most memorable private dinings that I did was for someone who’d been on a retreat before. It was her parents-in-law’s 50th wedding anniversary and her mother-in-law had quite late-stage cancer. She was on a strict diet, so I had a long list of dietary requirements to follow.
I had a phone conversation with the mother and father-in-law and I asked them if there was something special that they had eaten together or what did they eat as their wedding meal that they’d want to eat again? She told me that they ate trout for their wedding food. We chose to recreate their wedding food again. It was a very emotional experience for me. I went over and made the meal, and she was really happy because they had food that celebrated them and would be a forever memory.
Private dining is something that people don’t experience that often. It is a luxury, and often for an occasion, and they trusted me to cater that moment for them and their family. To me, that makes what I do worthwhile. It’s not about me; it’s about providing something which is an anchor to you in this time with your loved ones.
What a special experience for you to provide for them. What would you say is your perfect kitchen to cook in?
When I cater, I bring a lot of my own stuff. I bring my own utensils and knives. When I think about a house that I’d want to work in, I love big windows with beautiful views.
The boltholes that I’ve worked in have great windows and stunning views. I love that they have rustic touches like exposed beams, they are beautiful to work in and feel homely and timeless. To be honest though, I can work in any kitchen, big or small, as it’s part of the adaptability of being a private chef.
